Sweet and Sour Pork Chops

The other night, I made a pork chops and they were super easy and yummy. I thought I would share the recipe because it was so good. I use the really thin, boneless pork chops. 1/4 c. soy sauce 1/2 c. brown sugar 1/3 c. vinegar 2 tbsp. flour 1/2 c. water 5-6 pork chops Preheat oven to 350. Combine soy sauce, brown sugar, vinegar, flour and water in a bowl. Arrange 5-6 pork chops in a casserole dish without layering. Pour over sauce. Cover with foil or the dish lid. Cook for 1 hour. Serves 4-6. I paired this with some steamed asparagus and green beans that I seasoned with some garlic powder, beau monde , pepper, and a little soy sauce. I know this dinner is full of sodium, but it was really easy and delicious and I'm sure there are alterations that can be made to make it a little more healthy.

sick and hormonal

I don't know if it's because I've been sick or the pregnancy, but today my hormones are in full swing. Once I start crying, I can't stop and it's always over silly or little things. Ben's birthday is tomorrow. I don't know that I'm ready for my little boy to be 2 already. I remember his birth like it was yesterday. It makes me really sad. Ben and I have had the flu for the last week or so. It's been a nightmare and the worst part is, while I have to pull myself together and go to work tonight, I still don't feel well at all. I just want to stay home with my boys and sleep.

rough times

I'm having a rough time staying motivated to go to work. I don't feel happy with that aspect of my life. I'm so stressed and I don't get to see my husband. I know this is a decision I've made, so that I could keep Ben out of day care, and I don't regret that part, I just feel like I'm missing out on quality family time and hurting myself with stress and pent up anger towards work. I don't know what to do. We can't afford for me to quit but I just don't know that it's healthy for me, or the baby, to keep up like I have been. I wish there was a way for me to work at home.

Feels like fall

Today, the weather was wonderful and we took advantage of the beautiful day! It's hard to believe that it's still August as today was a little bit cool. We opened up the windows today and let the house air out. Shawn fed my cravings for yummy ravioli by picking up Paisano's artichoke and spinach ravioli. It's expensive but well worth it as it definitely exceeded my expectations. I have some left for lunch tomorrow too. He picked up a less expensive Bambinos for himself and Ben. After our early dinner/late lunch, we went on a walk to the little park out here in our neighborhood. It's really just a big open field where Ben and Maya can just run and play. We took bubbles with us, which turned out to be lots of fun as Ben and Maya both tried to catch/eat them. Shawn also threw his empty pop bottle for Maya to fetch (we forgot a ball) until he found a good stick later. We really had so much fun and wore them both out. We came back, gave Ben a bath and watched Trueb...

A little ranting is healthy...

I always seem to try to do things with Ben around lunch time or nap time. I know it's because that's when Shawn brings me the car and we take him back to work. Since I work evenings and we don't have a car until around noon or one, it makes it hard to do anything else. Today, it was the library. We went after taking Shawn back to work. I've learned that his patience runs out quickly so if I want any books, those have to be found quickly and first so he can help me find his books after where he doesn't have to be so quiet. Today, he wasn't even happy picking out his books. There was one point where he was playing and laughing with another boy about his age. I couldn't find this child's mother or whoever brought him to the library anywhere, so I let Ben and him play where I could watch them both, picked out some books, and then took this child to the desk in the kids area when I left. I thought it was really sad. I never let Ben out of my sight ...

I promise...

That I have a good excuse for not blogging in a while. We cannot blog at and work. My laptop was down and I was waiting on my wonderful yet busy husband to find the time to fix it for me. Ok , so big news that some people already know... 1. Shawn got a new job. It's with the same company he's been working for but now he's in sales. It came with a pay raise and he's super excited. 2. We are planning on moving in the next month or 2. 3. We are expecting baby #2. I'm due on March 6 th . Today we heard the heartbeat for the first time. I forgot how exciting it is. I also forgot exactly how hot my doctor is. I remember him as hot, but seriously, either it's the hormones, bad memory, or his aging. He is... Wow! That's all I can say. Shawn and I really are excited to be having another baby. We talk to Ben about it all the time, but I don't think he really understands. Well, it happened again...

I seem to have abandoned my blog again. I have a habit of doing that. I don't mean to. It just happens. I've really abandoned the internet altogether outside of work. I guess the important thing is that I'm here, updating now. There is some big things happening right now for our family. I just can't talk about them yet. I don't want to jinx anything. I've been working odd times during the day for me this past week and a half, and now we are getting into the August rush at work which means overtime. I'm lucky and only have to do it on Saturday afternoons but that means my whole Saturday is shot. I really cannot wait until the day I can become a stay at home mom. I really do like my job it's just getting too stressful for me. Ben is really starting to use his words. Today he was telling me "sure" every time I asked him a question.
