The letter V

This week we are learning the letter V but because we've been busy and it's been a short week, we had to do two of the crafts today. The first craft we did today came from  Totally Tots  and is super cute. V is for Vegetable What you'll need: construction paper scissors glue 1.  Draw and cut out the letter V. 2.  Cut out a celery, a carrot, and a green top for the carrot. 3.  Glue the top onto the carrot. 4.  Glue the celery to one side of the V.  (Ben was really excited about the celery because the Wonder Pets eat celery.) 5.    Glue the carrot to the other side of the V. And you're done.

Baked Beans

This is a nice baked bean recipe for picnics, cook outs, and barbecues. Baked Beans (This is not a picture of my baked beans, but this is similar to how mine look.) Ingredients: 2 cans of baked beans 1/4 cup BBQ sauce 1/4 cup brown sugar 1/2 small onion, chopped 7 pieces of bacon Directions: Preheat the oven to 350. Cook the bacon until crispy.  Break it up into little pieces. Mix onion, beans, bacon, brown sugar, and bbq sauce into the dish. Bake in the oven for 1 hour.

Easy Basic Vinaigrette

I've been very into making my own dressings lately and came up with a nice vinaigrette yesterday. Easy Basic Vinaigrette Ingredients: 1 cup extra virgin olive oil 1/2 cup apple cider vinegar 4 cloves of garlic, pressed 1/4 tsp rosemary, chopped 1 tsp basil, chopped 1 tsp oregano, chopped Directions: Put the vinegar, garlic, rosemary, basil, and oregano in a blender or food processor.  Slowly, while blending the vinegar and herbs, add the oil.  When well mixed, it is done.

Red Chard and Caramelized Onions

In our fruit and vegetable box from  Door to Door Organics , we received 2 bunches of red chard.  I'd never even  heard of it before.  After searching several different recipes for red chard, I came up with my recipe for Red Chard and Caramelized Onions.  It tasted so good too. Red Chard and Caramelized Onions Ingredients: 1 large onion, sliced olive oil 1 tsp brown sugar 1 bunch red chard, rinsed and chopped 1/4 cup kalamata olives, rinsed 2 tbsp capers, rinsed 1 tsp lemon juice Directions: In a skillet, cook onions in olive oil until they begin to brown.  Stir in the brown sugar, and continue cooking for about 2 minutes. When onions are brown, stir in chard and olives.  Cook until chard is slightly wilted and stir in capers.  Continue cooking until chard is completely wilted, about 3 more minutes.  Poor lemon juice over the top and stir.

Delicious Apple Enchiladas

A friend put this recipe on her blog and it was so delicious that I felt the need to share as well.  You can see it here on her blog,  Domestic Wonder , as well. Apple Enchiladas Ingredients: 1 QT apple pie filling (the recipe for my pie filling will follow the apple enchilada recipe) 6 flour tortillas (I actually ended up using 8) 1 tsp ground cinnamon 1/2 cup butter 1/2 cup white sugar 1/2 cup brown sugar 1/2 cup water Directions: Preheat oven to 350 degrees. Grease a baking dish. Spoon pie filling down the center of each tortilla.  Tuck the edges and then roll the tortillas placing them seam side down into your baking dish. In a saucepan over medium heat, combine cinnamon, butter, white and brown sugar, and water.  Bring to a boil stirring constantly.  Reduce heat and simmer for 3 minutes.  Pour the sauce over the enchiladas and let stand for 30 minutes. Bake in preheated oven for 20 minutes, or until golden....

The letter U part 2

This craft came from  No Time For Flash Cards . U is for Underground What you'll need: paper scissors glue (We needed a brown marker since we didn't have brown paper) 1.  Draw and cut out the letter U. 2.  Cut out a strip of brown paper.  (We had to color ours brown.)  Glue it to the bottom of the blue paper. 3.  Cut out a sun and a green strip of paper. 4.  Cut the top of the green strip so that it looks like grass and glue it above the brown strip on the paper. 5.  Glue the sun  in the blue part. 6.  Glue the letter U in the brown part of the picture. And you're done.

Whew I've gotten behind.

But in my defense, a lot has happened in this past week.  I'm going to let you in on all of that now. Here was our schedule for last week: We have been spending so much time together as a family lately and I love it. Tuesday, we got our very first delivery from  Door To Door Organics .  I was so excited that I waited around for it and it didn't come and didn't come and didn't come.  I gave up and decided to take the kids to the park.  We were at the park for an hour and a half and then went to pick Shawn up from work.  When we came home, we had a huge box by the front door.  Before the delivery, our fridge was empty since it was time to go grocery shopping.  After the delivery, I was searching for places to put food.
