Tonight, I experimented and came up with a pretty good recipe.
Tortellini Salad
(I apologize for the picture. I forgot to take it before we served our plates.)
Ingredients:
About 3-4 cup of spinach, chopped to bite sized
20 oz raw tortellini
20-25 kalamata olives pitted and halved
20-25 grape tomatoes, halved
1/2 cup feta cheese
1/4 cup green onion, chopped
dressing:
1/4 cup fresh parsley, chopped
3 tbsp fresh basil, chopped
1 tbsp fresh rosemary
1/3 cup extra virgin olive oil
dash of pepper
1 tsp red wine vinegar
Cook the tortellini as directed on the package. In a blender or food processor, put in all the ingredients for the dressing. Blend until it is well mixed (will become a green color). Chill the dressing and the tortellini. After chilled, mix the dressing, tortellini, dressing, green onions, olives, tomatoes, and spinach. Mix until everything is coated in the dressing. Add the feta cheese, mix a little more and serve.
It was so good, so easy, and super light. The perfect meal for a hot summer evening.
