This recipe came from my Aunt Marci. At the beginning of football season, she sent us a book of some of her recipes. This recipe is so quick, easy, and delicious. We all love it in this house, and we made it for Sydney's birthday party. Everyone loved it there too. I've altered it just a tiny bit so that it works with things we always have on hand.
Taco Soup
Ingredients:
1 lb ground beef
1 onion, chopped
1 can of corn
2 cans of pinto beans
3 cans of rotel
1 packet of taco seasoning
1 packet of ranch dressing mix
Directions:
Brown the ground beef with the chopped onion in a large pan.
When the beef is browned, add the taco seasoning and ranch dressing mix.
Mix well and then add the corn, pinto beans, and rotel. (Do not drain any of the cans. The liquid in the cans creates the soups broth.)
Cook for 10 minutes.
We like ours with shredded cheddar cheese and sour cream although avocado on there sounds good too.
