I made the best buttermilk pancakes yesterday. The whole family thought they were the best I've ever made and we eat a lot of homemade pancakes in this house.
Buttermilk Pancakes
2 cups flour
1/4 cup sugar
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 1/2 cups buttermilk
2 large eggs
2 tbsp melted butter
1 tsp vanilla
In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
In a medium bowl, mix together the buttermilk, eggs, melted butter and vanilla. Beat until thoroughly combined.
Add the wet ingredients to the dry ingredients and mix until just combined, being sure to not overmix.
Scoop the batter into a warm skillet (I use cast iron) in however big measure you want your pancakes. (I use a 1/2 cup measuring cup.)
Cook until that side is done and then flip and cook the other side. Proceed with the rest of the batter until you're done. Serve with maple syrup.
