Shawn and I decided that we were going to make BLTs. Beside the fact that my lettuce was frozen but my bread was homemade and the bacon was fresh and from the Farmer's Market. It needed the last little homemade delicious touch so I remembered this yummy looking herb mayonnaise on Sandra's blog. Let me tell you, it's so worth it. My kids loved it as well.
Herb Mayonnaise
4 large egg yolks, room temperature
6 tbsp lemon juice
1/2 tbsp ground garlic
1 tsp salt
1 tsp black pepper
2 cups oil (I used olive oil)
chopped fresh herbs
Place egg yolks, lemon juice, garlic, salt, and pepper in your food processor. While the food processor is running, drip the oil into the feed tube very slowly. Like really slowly, slowly. It should turn yellow and thicken. After it's done, mix in the herbs, and store it in the refrigerator.
It makes the absolute best bacon and tomato sandwiches.
