So, I tried something completely new and quite a bit scary for dinner today. I think it was scary because I'm not really very adventurous in the kitchen. I experiment but to cook something like I've never even eaten before doesn't really happen. Also, as much as I'd love to be, I'm no baker, and the oven and I often don't get along. I must add that they were very easy, and they are jam packed with veggies. Ben ate them and he does like eggs or vegetables.
Ham and Spinach Frittata Singles
Ingredients:
10 eggs
2 hand fulls of fresh spinach, chopped
2 cups of ham, chopped
1/2 cup onion, chopped
1 tbsp parsley, chopped
2 tbsp sour cream
1/4 cup feta cheese
2 tbsp mozzarella cheese
1/8 tsp salt
dash of pepper
Directions:
Preheat oven to 375 degrees.
Grease a muffin tin.
In a blender, mix all of the ingredients together, and then pour into the muffin tin.
Bake for 15 minutes, or until firm but still moist.
Remove them, immediately from the muffin tin and serve warm.
We put salsa on them also.
