I'm always trying to get my kids to eat veggies and they love eggs as long as there is cheese involved so I figured this would win. I was correct! Ben even had seconds.
Potato Broccoli and Bacon Egg Casserole
3 potatoes
broccoli, chopped into small bite size pieces
1 onion, chopped
12 eggs
1 pkg of bacon, chopped
1 summer squash, peeled and chopped into bite size pieces
any other veggies you want to hide in there
cheddar cheese
any seasonings you use in eggs (I use salt, pepper, garlic, paprika, cumin, and beau monde)
Peel the potatoes, cut into bite sized pieces, and boil until soft. Cook the chopped bacon in a skillet until crispy.
Preheat your oven to 350 degrees.
Mix the eggs as you would for scrambled eggs with your spices.
In a large mixing bowl, mix together potatoes, broccoli, onion, bacon, squash, and 2 handfuls of cheese. Once it's mixed well, pour into a greased 9x13 baking dish. Pour the eggs over the veggie mixture.
Bake for about 30 minutes until firm. Sprinkle cheese over the top and cook for an additional 5 to 10 minutes to get all the cheese to melt.
Serve hot and enjoy.
