Seriously???

I think Mr. Groundhog was quite confused when he said spring was coming.  I know, putting a lot of faith in an animal and his shadow...  This morning we woke up and I sent the kids downstairs so I could get dressed and we could get our day started.  Ben yelled up the stairs, "Mommy it's going to snow today!"  I looked outside and sure enough, it was snowing, hard.



I have to admit though.  While I'm ready for the weather to be nice and warm, the snow is really beautiful.

We had some errands to run, and by the time we made it out of the house, the neighborhood was beginning to look like a wintery wonderland.



We had to go to the grocery store because I've been putting it off for several days and the kids needed to burn some energy and get their mind off of the kitty.  Morgan texted me, telling me she was taking Langston to Laugh Out Loud so we met them there before the grocery store.  It was insanely packed.  I didn't really think about it being spring break.  Truth be told, it's not that big of a deal, just a little harder to keep an eye on the kiddos.



When we left Laugh Out Loud to go to the grocery store, the snow was still coming down like crazy.  I don't like driving in the snow and my windshield wipers are not in good shape.  Actually, the one over the driver's side doesn't work at all.  I was not thrilled about driving across town, but you have to do what you have to do.



We made it through the grocery store, but not without picking out a couple of flower bouquets.  My kids are suckers for flowers and so am I.  I love the smell and the colors, and while I prefer living plants to cut flowers, I like them too.  They do look nice with all the leafy plants and succulents I have around the living room and kitchen.  It's nice to see plants and flowers everywhere you look.  Honestly, I would like to learn to make flower arrangements.  It's something I've always liked.



The flowers sure brightened up this sad, gloomy, and snowy day.

Alright, I need to get off of here.  The husband has Dungeon and Dweebs tonight, so he's bringing home dinner, and he should be here anytime.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
