Creamy Potato Soup

We love a nice, body warming, creamy potato soup in our house. This recipe from Sugar Spun Run was really good!




Creamy Potato Soup

  • 6 strips bacon, uncooked and cut into small pieces
  • 3 tbsp butter
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1/3 C flour
  • 2 1/2 lbs gold potatoes, peeled and diced into pieces no larger than 1"
  • 4 C chicken stock
  • 2 C milk
  • 2/3 C heavy cream
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp ancho chili powder
  • 2/3 C sour cream

Place bacon in a large Dutch Oven over medium heat and cook until bacon is crisp and browned. Remove the bacon and set aside, leaving the fat in the pot. 

Add the butter and onion. Cook over medium heat until onions are tender. Add the garlic and cook until fragrant. Sprinkle the flour over the ingredients in the pot and stir until smooth. Whisk if needed. 

Add diced potatoes to the pot along with chicken stock, milk, heavy cream, salt, pepper, ancho chili powder. Stir well.

Bring to a boil and cook until potatoes are tender when pierced with a fork. (about 10 minutes)

Reduce heat to simmer and remove half of the soup to a blender and puree until smooth. Return the pureed soup to the pot and add sour cream and bacon pieces. Stir well.

Allow soup to simmer for 15 minutes before serving.

Top with additional sour cream, bacon, cheddar cheese or chives.

Blogmas 2014 - Day 13 How Are You Counting Down To Christmas

Ok, honestly....  I'm not.  I have this gorgeous advent calendar that is 3 building with little numbered doors all over them.  I haven't gotten it out for lack of space and really small children.  Maybe next year.  Also, Ben has been all over the lego ones and stuff so I figure, I'll pick up some next year or as I see them now this year, so each kid can have their own next year.  I don't know maybe I'll just make them if I'm feeling crafty and find the time.  It actually hit us all at once on Saturday that Christmas was less than 2 weeks away.
