Yesterday for breakfast I made the best banana muffins I've ever made. My husband even asked me if they were a mix or homemade because they were so fluffy and not dense like they tend to be.
Banana Muffins
Ingredients:
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
4 large bananas, mashed
3/4 cups sugar
1 egg
1/3 cup butter, melted
1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees. Spray muffin pan with non-stick spray or use paper liners.
Sift together the flour, baking powder, baking soda, salt, and cinnamon, and set aside.
Mix bananas, sugar, egg, butter, and vanilla in a large bowl. Add the flour mixture and mix until smooth and fluffy.
Scoop into the muffin pan.
Bake for about 20 minutes and test with a tooth pick.
