Baked Potato Casserole

Yesterday, I had Ranch House Crockpot Pork Chops cooking, and was trying to come up with something yummy and creative to go with it and I thought, who doesn't love potatoes?  My kids LOVED these and I have a feeling that it is something I'll be recreating quite frequently this fall and winter.

Baked Potato Casserole



Ingredients:

4 potatoes
3/4 cup sour cream
1 1/4 cup shredded cheese
1/2 onion
salt
pepper
garlic powder

Directions:

Preheat oven to 400.  
Peel the potatoes, cut into small bite sized pieces and put into a mixing bowl.
Slice the onion into thin slices and add to the potatoes in the mixing bowl.
Sprinkle however much salt, pepper, and garlic powder as you would like, on top of the potatoes and onions, then stir.
Add the sour cream and about 1/2 cup of the cheese and mix well.  Make sure you are coating all of the potatoes in this sour cream mixture.
Pour into a greased casserole dish.  I used a 9x9 and it was the perfect size.  Sprinkle the remaining cheese over the top.
Bake in the oven for 30-45 minutes or until the potatoes are soft.

Blogmas 2014- Day 1 Favorite Christmas Tradition
