I meant to post this a few days ago but with running on hardly any sleep and the illness in our home, I haven't been motivated to do much of anything, let alone escape to the office to type up this yummy recipe. I got this recipe from the October issue of Parents magazine, but I made a few minor changes. For the original recipe you can look in Parents magazine, but for what my recipe (that will definitely be cooked again here) you can just scroll down.
Sweet Glazed Apple Meatballs
Ingredients:
1 cup bread crumbs
1/4 cup grated parmesan cheese
1 large egg, beaten
1 medium apple, chopped into smallish pieces
1 tbs dijon mustard
1 tbs fresh chopped parsley
1/4 tsp each, salt and black pepper
1 lb ground beef
1/2 cup apple cider
1/4 cup maple syrup
1 tbs balsamic vinegar
Directions:
Preheat oven to 375.
In a large mixing bowl, combine bread crumbs, cheese, egg, apple, mustard, parsley, salt, and pepper. Mix well. Add the ground beef and fold into the wet mixture until combined.
Roll into about 12 balls and place onto an ungreased cookie sheet.
Bake for about 20 minutes or until cooked through.
In a pot, mix apple cider, maple syrup and vinegar. Simmer over low heat until reduced by half, about 15 minutes. Toss meatballs into the glaze and coat well.
Serve hot.
I had a little problem getting the glaze to reduce by half or become glaze like, but it was still delicious. Also, if you want, these meatballs hold up well on their own and don't need a glaze at all. Really tasty.
