Iced Pumpkin Cookies

I got this recipe, as I mentioned in the last post, from Full Bellies Make Happy Kids - Iced Pumpkin Cookies.  We've been all excited about baking in this house lately, especially anything pumpkin, so I knew I had to give them a try.  They came out so soft and fluffy, like cake more than cookies.  They didn't last two full days in our house.

Iced Pumpkin Cookies



Cookies

Ingredients:

2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
1/2 cup butter, softened
1 1/2 cup sugar
1 cup pumpkin
1 egg
1 tsp vanilla extract

Icing

Ingredients:

2 cups powdered sugar
3 tbsp milk
1 tbsp melted butter
1 tsp vanilla extract

Directions:

Preheat the oven to 350.
Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt in a mixing bowl and set aside.
In a medium mixing bowl, cream together the butter and sugar.  Add the pumpkin, egg, and vanilla.  Beat until creamy then mix in the dry ingredients.
Drop onto a greased cookie sheet by the spoonful and flatten slightly.
Bake for 15-20 minutes.

Mix together the powdered sugar, milk, melted butter, and vanilla extract .  When the cookies have cooled then drizzle the glaze over the top with a fork.

Blogmas 2014 - Day 13 How Are You Counting Down To Christmas

Ok, honestly....  I'm not.  I have this gorgeous advent calendar that is 3 building with little numbered doors all over them.  I haven't gotten it out for lack of space and really small children.  Maybe next year.  Also, Ben has been all over the lego ones and stuff so I figure, I'll pick up some next year or as I see them now this year, so each kid can have their own next year.  I don't know maybe I'll just make them if I'm feeling crafty and find the time.  It actually hit us all at once on Saturday that Christmas was less than 2 weeks away.
