We eat a lot of chicken here, and I mean a lot. This is another Sandra recipe and believe me, we'll be making it again and again and again. Especially since Shawn wasn't here to try it.
Bacon Wrapped Chicken
Chicken breast
bacon
salt
pepper
onion and chive cream cheese
a handful of cheddar cheese
Season your chicken breast with salt and pepper, and beat it until it's only about 1/4 inch thick.
In a mixing bowl, mix the cheese with the cream cheese. Smear it onto the flattened chicken breast. Roll up the chicken breast and then wrap with bacon.
Bake for about 40 minutes at 375 degrees, then place under a broiler for a minute or two to crisp the bacon a little.
