Happy Homemaker Monday

Good morning! Is anyone else as tired as I am? Good grief! I need a weekend to recover from my weekend. 



The weather outside is::::
It's chilly this morning, but it's supposed to get beautiful later today.  The first half of our week actually looks amazing.


On the breakfast plate this morning::::
Just coffee so far. I'm really thinking about a bagel though. 

As I look outside my window:::
It's so beautiful! The sun is out, the skies are blue, the grass is green, and SPRING IS HERE!

Right now I am::::
Trying to type this post at the kitchen table, but I have a wild Scotland in my lap, and she seems to think she should be typing this post instead. Harley keeps walking in between my feet, rubbing against my ankles.
....................
Ok, I've moved upstairs to my bedroom with the girls.  

As I look around the house::::
I have a basket of laundry in the living room begging to be folded and folded clothes piled on the ottoman in need of being put away.  The kitchen sink is full of dirty dishes.  I was lazy last night after dinner and didn't do dishes. Honestly, I had a load of dishes in the wash that I was waiting to finish first and then it was late. Other than that, the house is nice and picked up, just begging for the kids to trash it.

Rylie and Sydney are laying on the floor of my room, playing Minecraft together, Scotland is tearing all of her pajamas out of her pajama drawer. Shawn is working in the office, and because he's on calls we are hiding out upstairs.

Run to Walmart for Syd's baby picture print for school tomorrow
Pick Sydney's art for her school art fair
Pick up new soccer cleats for Sydney and get Rylie everything she needs for soccer this weekend.
Email Ben's coach about his team schedule (The games start Saturday and we have no idea what time!) 
Finish Sydney's dance recital paperwork
Finish Sydney's Kindergarten Roundup paperwork for Friday.

Hoping to read some Game of Thrones

On the TV today::::
Shawn and I finally started watching True Detective.  I'm so mad I fell asleep during an episode last night, so I have to go back and rewatch the end of that one.  If you haven't watched it and you like crime dramas, or Matthew McConaughey, you should definitely watch it, on HBO Go.  

On the menu this week::::
Working on my meal plan currently. The hubs has enjoyed helping with the meal plan actually.  We've been cooking together a lot since he's started working at home. Yesterday he sat down with a cookbook and came up with 3 sides to go with steaks that we made together that were amazing!  I'm hoping to get several recipes up this week, including Shawn's amazing steak recipe!

I do know that Friday evening, I'm having sushi or shrimp hibachi since it's a Friday during lent.  Usually when doing the meal plan, I space that out but come Friday and I can't have meat, we grab sushi for dinner.  


What I am creating at the moment::::
Right now, I'm creating Scotland's 1st birthday party. She turns 1 on the 16th and we are doing a party at home for her, but we have a very large immediate family, as well as some extended family and friends that feel like immediate family with how close we are.  I'm doing a lot of hot glueing fake flowers to things as well as praying for nice weather and creating an outside oasis.

We spent a few hours outside yesterday, cleaning up dog poo, mowing, pulling dead grass and leaves and plants, dumping out the old plant graveyard, and then playing in the yard.  I'm ready for spring and am hoping to start planting flowers this week!

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
