Chicken Enchiladas

Chicken Enchiladas Ingredients Chicken (I used boneless, skinless chicken breast) 1/2 green pepper, chopped 1/4 onion, chopped 1 tablespoon extra virgin olive oil 1 Jar of salsa Flour tortillas 8 oz mexican style sour cream dip Shredded cheddar cheese Directions Put the chicken in a crock pot and cover in the full jar of salsa.  Cook until the chicken is tender. Preheat the oven to 350 degrees. Saute the onion and green pepper in the EVOO.  When the chicken is done cooking, shred it into a mixing bowl and add the onion, green pepper, and 2/3 the dip.  Mix well and add a little cheddar cheese. Warm the tortillas. Put the last of the dip into the salsa in the crock pot and mix well. Put meat mixture into the center of the center of each tortilla.  Roll up the tortillas and place them into a baking dish.  Poor the salsa and dip mixture over the top of the enchiladas and cover with cheddar cheese. Put lid on container or cover with foil.  Cook for 20 minutes covered. 

Easy Beef Enchiladas

This is completely my recipe.  Some recipes, I make based loosely off of other recipes.  My problem is I don't normally measure things like spices and cheese.  When you add the spices, use as much or as little as you would like.  Just be careful not to go overboard. Easy Beef Enchiladas Ingredients Flour tortillas 1 lb ground beef 1/2 green bell pepper, chopped 1/4 onion, chopped Mozzerella cheese, shredded Cheddar cheese, shredded 1 can enchilada sauce garlic powder beau monde cumin paprika chili powder pepper 1 tablespoon extra virgin olive oil Directions Preheat oven to 350 degrees. Strawberry Salad Dressing

Here's the recipe to the delicious salad dressing I made Tuesday.  It was so easy and took no time at all. Strawberry Salad Dressing Ingredients 1 cup fresh strawberries (I cut mine in quarters) 1/2 cup orange juice 1/4 teaspoon salt 4 teaspoons honey 2 tablespoons vinegar 2 tablespoons extra virgin olive oil Directions Puree all the ingredients in a blender.  Chill until you're ready to serve. I was worried it wouldn't turn out right, but after this, I'm eager to try more homemade dressings.

A nice week

We have had a great week so far.  It's been busy though.  Monday was our slow day.  For people that think stay at home mom's don't work, they are so wrong.  I work my little hiney off around the house and even though I'm no longer working outside of the home, I have to keep a day planner.  My mom actually got a great one for me for Christmas last year.  I love it and don't know what I'll do when the year is done.  I guess I'll have to ask her where she got this one at. I do the best I can to write down everything, from appointments and activities, to walks (mileage), dinners (for left over purposes) and crafts. Here's an example of my week.  The example is actually this week as of tonight (Thursday night). Tuesday night, we ate dinner with friends.  I brought a salad and was inspired to try my own dressing.  It turned out amazing by the way.  I was so excited about it.  I've never made salad dressing befor

The letter P part 4

We did this craft today as well.  It turned out really cute!  This one also came from No Time For Flash Cards . P is for Peacock What you'll need: construction paper scissors glue markers googly eye 1.  Draw and cut out the letter P. 2.  Color the letter P. 3.  Cut out and color feathers for the peacock. 4.  Glue them to the back of the P. 5.  Cut out a little plume of feathers. 6.  Glue it to the top of the P from the back. 7.  Cut out a beak. 8.  Glue it to the front of the P. 9.  Glue on the googly eye. And your cute peacock is done.

The letter P part 3

This craft was supposed to be done yesterday, but we didn't have time for crafts yesterday in between nap time and playtime at the park.  This craft also came from No Time For Flash Cards . P is for Pennies What you'll need: construction paper scissors pen glue pennies 1.  Draw and cut out the letter P. 2.  Glue the pennies onto the P. That's it.  It's not really too involved, but Ben liked it a lot.

The letter P part 2

Oops.  It seems I have gotten behind on my craft posting.  This craft was one we did Tuesday.  It came from No Time For Flash Cards . P is for Piano What you'll need: construction paper glue scissors markers 1.  Draw and cut out the letter P leaving the straight side thicker than normal. 2.  Cut out a strip of white, as long and wide as the straight side of the letter P. 3.  Cut out strips of black that are shorter than the white piece is wide. 4.  On the white piece, draw lines across with marker. 5.  Glue the white piece onto the straight part of the P. 6.  Glue the little black pieces onto the white part. 7.  Once all of the black parts are attached, it is done. Ben was so funny.  He was playing it and singing like it was a real piano.

The letter P

I have a letter P craft planned for everyday this week.  I let Ben pick which one he did today.  The one we did, came from Totally Tots . P is for Penguin What you'll need: black, white, and orange paper scissors glue pen googly eye 1.  Trace and cut out the letter P from the black paper. 2.  Cut a belly from the white and feet and a beak from the orange. While I was cutting, Ben was coloring his letter P coloring sheets. 3.  Flip your P over.  Glue the belly onto the leg of the P. 4.  Glue one foot onto the P from the back. 5.  Glue the second foot onto the front of the P. 6.  Glue the beak onto the loop of the P. 7.  Glue the googly eye onto the P. 8.  Finally, draw a line on the beak to make it look more beak like. And you're done.  Here is the Penguin.

A rainy day in our life

Over the past couple of nights, Shawn and I have been packing the kids up in the stroller and going on a walk.  Last night, we took the dog too and put in a little over three miles, jogging some of the way.  I was so proud of how much I was actually able to jog.  I can't wait to get out there and do it again and hopefully jog even more.  I feel so good today and full of energy. We got up this morning and picked up the mess that I was too lazy and tired to pick up last night.  I have a wonderful husband though, that had done the dishes for me last night.  All I had to do with them was to put them away.  Ben put his toys and all the shoes away, then sat down and read to himself.  I love that he loves books so much and he looked so cute curled up with his book.  We did the craft I'd planned on doing yesterday, but was to tired.  It was O is for octopus.
