Ham and Spinach Frittata Singles

So, I tried something completely new and quite a bit scary for dinner today.  I think it was scary because I'm not really very adventurous in the kitchen.  I experiment but to cook something like I've never even eaten before doesn't really happen.  Also, as much as I'd love to be, I'm no baker, and the oven and I often don't get along.  I must add that they were very easy, and they are jam packed with veggies.  Ben ate them and he does like eggs or vegetables. Ham and Spinach Frittata Singles Ingredients: 10 eggs 2 hand fulls of fresh spinach, chopped 2 cups of ham, chopped 1/2 cup onion, chopped 1 tbsp parsley, chopped 2 tbsp sour cream 1/4 cup feta cheese 2 tbsp mozzarella cheese 1/8 tsp salt dash of pepper Directions: Preheat oven to 375 degrees.  Grease a muffin tin. In a blender, mix all of the ingredients together, and then pour into the muffin tin. Bake for 15 minutes, or until firm but still moist. Remove them, immediately fro

The letter U

I got this craft from No Time For Flash Cards .  It was cute and fun. U is for Umbrella What you'll need: construction paper scissors glue markers pompom maybe a glue gun 1.  Draw and cut out the letter U. 2.  Draw and cut out an umbrella. 3.  Color both the U and the umbrella. 4.  Glue the umbrella onto the top of the letter U. 5.  Glue the pom pom onto the top of the umbrella.  I had to use a glue gun for this. 6.  Color the lines on the umbrella to make it look more like an umbrella. And you're done.

The letter T part 2

I wanted to do this craft last week, but somehow we just never got the chance.  We did it today instead, to wrap up the letter T. T is for Tree What you'll need: construction paper brown marker scissors glue 1.  Draw and cut out the letter T. 2.  Cut out leaves from green construction paper. 3.  Color the letter T brown. 4.  Glue the leaves onto the top of the T. And you're done.  Super easy but turned out pretty cute.

What a crazy, wonderful, life we live

I can't believe how hectic things are here.  I'm really enjoying it all though, and I must say that I have the two most precious children in the whole world and they keep me well entertained. This week the weather was so hot that I cut out park trips all but two days.  Between the air conditioner being out on the car and the heat both inside and out of the car, it was just too uncomfortable and probably not very safe either. Tuesday, Shawn mowed the lawn at our old house.  I can't even begin to tell you how tall the grass was there.  It hadn't been mowed since we moved out.  Our mower was trying to cause trouble as well. Wednesday, we had our biweekly dinner with our friends Tim and Rebekah, but this time we did it at our house.  I made the tortellini salad since Shawn was so eager to show it off to people.  It was really good (not to toot my own horn or anything)!  Also, on Wednesday, my best friend Lauren and her

The letter T

I have to admit, I wasn't prepared this week and was a little worried about being able to get a craft in at all today.  I managed to get my act together this evening and we did one that I got from Totally Tots .  It's so cute and Ben is still talking about it. T is for Tractor What you'll need: construction paper scissors glue 1.  Draw and cut out the letter T. 2.  Cut out wheels, centers for the wheels, a seat and a steering wheel. 3.  Glue the insides onto the wheels. 4.  Turn the T on it's side and glue the seat on. 5.  Glue the wheels on from the back. 6.  Glue the steering wheel on. And that's it.  Super easy but really cute. We had to take it away from Ben so it could dry.  He just wanted to keep playing with it.  It was too cute.  That's how you know when you've done

Tortellini Salad

Tonight, I experimented and came up with a pretty good recipe. Tortellini Salad (I apologize for the picture.  I forgot to take it before we served our plates.) Ingredients: About 3-4 cup of spinach, chopped to bite sized 20 oz raw tortellini 20-25 kalamata olives pitted and halved 20-25 grape tomatoes, halved 1/2 cup feta cheese 1/4 cup green onion, chopped dressing: 1/4 cup fresh parsley, chopped 3 tbsp fresh basil, chopped 1 tbsp fresh rosemary 1/3 cup extra virgin olive oil dash of pepper 1 tsp red wine vinegar Cook the tortellini as directed on the package.  In a blender or food processor, put in all the ingredients for the dressing.  Blend until it is well mixed (will become a green color).  Chill the dressing and the tortellini.  After chilled, mix the dressing, tortellini, dressing, green onions, olives, tomatoes, and spinach.  Mix until everything is coated in the dressing.  Add the feta cheese, mix a little more and serve. The letter S part 4

I got this craft from Totally Tots . S is for Snail What you'll need: Construction paper scissors glue markers googly eyes 1.  Draw and cut out the letter S. 2.  Cut out a shell and a head. 3.  Color the shell. 4.  Glue the shell to the S. 5.  Glue the head onto the S. 6.  Glue the googly eyes on. 7.  I drew a mouth for him as well. And you're done.

The letter S part 3

S is for Swan What you'll need: Construction paper scissors glue googly eye 1.  Draw and cut out the letter S.  Make the top end look more like a head and the bottom end look more like a tail. 2.  Cut out a beak and 2 feet. 3.  Glue the feet on the bottom of your S.  One to from the back and one from the front. 4.  Glue the beak on.  (I used a marker to make it look more like a beak/mouth.) 5.  Glue on the googly eye. And you're done.

The letter S part 2

S is for Snake What you'll need: construction paper scissors glue googly eye markers 1.  Draw and cut out the letter S.  Shape the top end like a head and the bottom end like a tail. 2.  Cut out a tongue. 3.  Color the letter S. 4.  Glue the tongue onto the head from the back of the S. 5.  Glue the googly eye on. And you're done.
