Where Have I Been?

I've been having the best times lately.  I have been spending a lot of time with the kids, as always since I'm a stay at home mom, but it never gets old.  The husband and I have been communicating better than we have in a long time.  I'm not saying we have been having problems or even that our communication was ever bad, but when we have those little tiffs that every couple has every now and then, we've been better lately at solving them with real solutions and not just band aids.  For the first time in all my 25 years, I can honestly say that I feel like an adult.  I know I am one, but it's just like on your birthday, when someone says "Do you feel older?" and you really want to know what they think the difference between how 24 and 25 feels, is. Easter was amazing even though we got really behind and lunch/dinner was served about an hour and half late.  Who cares!  It's the holiday!  You get to be around the ones you love, and this only meant, mor

The weather in my neck of the woods: Cold and Rainy Things that make me happy:   Family time! Book I'm reading: Hoda: How I survived war zones, bad hair, cancer and Kathie Lee. by Hoda Kotb  I love it.  You'll be just sitting down to read and next thing you know, you've read 50 pages.  Don't forget the tissue for this read.  She's an amazing woman and shares a lot of ups and downs, personal and professional. What's on my TV today:   Tonight is Bethenny Ever After and Secret Life of the American Teenager.  Today, I need to watch this weekend's Mob Wives. On the menu for dinner: Taco Soup and corn bread On my To Do List: Vacuuming Sweeping Dusting Glass New Recipe I tried or want to try soon: Nothing at the moment. ABC's of Liz

I saw this over at Nerd Nest and thought I would do it here.  It looked like a fun way to get to know me a little bit better. Age: 25 Bed size: King Chore you hate: Dishes! And laundry, but the laundry is only a problem because I have to run the dryer 2-3 times to get things dry and it backs everything up making laundry take forever. What's on my TV today:   I'm honestly not sure.  Usually I watch last nights TV from my DVR, but I watched my shows last night.  Tonight, new Secret life of the American Teenager, Law & Order: Los Angeles and Bethenny Ever After. On the menu for dinner: Egg Sandwiches on homemade bread. Creamy Rotini with Ham and Asparagus

This recipe came from  Full Bellies, Happy Kids .  This is a blog that if you love food or cooking, you HAVE to check it out.  Her amazing recipes mixed with her wowing photography leaves your mouth watering in just seconds after going to her blog.  We've tried a few recipes from here and plan on doing many more. This is one we all enjoyed.  Ben picked out the asparagus, but ate the rest.  I consider it a win. Creamy Rotini with Ham and Asparagus Ingredients: 1 package Tri-Color rotini Ham, diced (amount will depend on how much or little you want) 2 small shallots, diced Asparagus, cut into thirds olive oil salt and pepper garlic powder 2 cups heavy cream 1 tbsp flour shredded cheese Directions: Cook rotini according to the directions on the package.  Drain and pour into a casserole or baking dish. Drizzle some olive oil into a skillet.  Add the asparagus, ham and shallots and cook until the asparagus is cooked through but still has a little crunch.  Add the

Easy Taco Soup

This recipe came from my Aunt Marci.  At the beginning of football season, she sent us a book of some of her recipes.  This recipe is so quick, easy, and delicious.  We all love it in this house, and we made it for Sydney's birthday party.  Everyone loved it there too.  I've altered it just a tiny bit so that it works with things we always have on hand. Taco Soup Ingredients: 1 lb ground beef 1 onion, chopped 1 can of corn 2 cans of pinto beans 3 cans of rotel 1 packet of taco seasoning 1 packet of ranch dressing mix Directions: Brown the ground beef with the chopped onion in a large pan. When the beef is browned, add the taco seasoning and ranch dressing mix. Mix well and then add the corn, pinto beans, and rotel.  (Do not drain any of the cans.  The liquid in the cans creates the soups broth.) Cook for 10 minutes. We like ours with shredded cheddar cheese and sour cream although avocado on there sounds good too.

Meat Loaf

My husband is a big meat and potatoes guy.  To be honest so am I.  This is one of his favorite meals, and lets face it, the kids love it too and every mom knows how important that is. Meat Loaf Loaf Ingredients: 2 lbs ground beef or turkey burger (tastes great either way) 1 onion chopped 1 green bell pepper chopped Any other peppers you may want to add ( I like to add a lot, but it's really a personal preference thing) 1-2 slices of bread (in crumbs) 2 eggs 2 tbsp katsup 2 tbsp bbq sauce 2 tbsp mustard 1 1/2 tsp salt 1/2 tsp pepper 1 tsp garlic powder 1 tsp beau monde Sauce  Ingredients: 1/3 cup katsup 1/3 cup brown sugar 2 tbsp bbq sauce 2 tbsp mustard Directions: Preheat the oven to 350. Mix together all of the loaf ingredients in a big mixing bowl.  I find it best to use your hands. Put the hamburger mixture into a loaf plan or casserole dish.  I like to use a 9 x 13 baking pan. Mix the sauce ingredients in a small bowl. Pour the sauce over t
