Future and Recipes

I’ve gotten so bad at many things as life has gotten more busy. Throw in a pandemic and 4 kids remote schooling and everything I really enjoy doing has going to the wayside. My reading was a struggle, crocheting hasn’t happened in months. I did a little embroidery for a week or two, but quickly ran out of time for that. Blogging, vlogging, photography, etc has been non existent. Cooking, which I usually love, has really become a major chore. When I do cook something that we love, I usually lose the recipe in my long open list of tabs on my phone, iPad, or computer. I was a hot mess before the pandemic, but now, I’m a hot mess unable to get off of the struggle bus that has become life. 

Ok, well I have decided that I don’t know how much life posts I will have here, but I do know that I need a place to put our loved recipes. So, I’m going start that now. Sharing my family’s favorite recipes we’ve found all over the internet with everyone else, in one place so I can find it again and again, and hopefully cook them more than the one time. If I have a little time, and feel like I want to, I may throw in the odd family/life update. Also, rest assured. My blog isn’t one that you have to scroll through the post for what feels like an eternity including my whole life story and multiple ads to get to the actual recipe. Usually there is a little blurb that states where the recipe came from, and whether or not my picky eaters loved it. Other than that it’s straight to the point.

Happy Homemaker Monday

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
