Holy Snow Days Batman!

So, apparently there is (as of yesterday at least) snow in 49 of the 50 states in the US.  We have a few inches here, and now, it's super cold as well.  I'm not talking a little chilly or like cold enough to snow.  I'm talking last night, we got down to -12 degrees.  That, by my definition, is COLD!



I do not drive in snow.  I hate it and while I could, it makes me too nervous, so I choose not to.  Because of all the snow, we've been stuck at home, unless Shawn is going to drive us somewhere.  The kids, and Ben specifically, are starting to get stir crazy.  The night we got the majority of the snow, Shawn and I took the kids to Walmart and we bought one of Ben's favorite movies and the Thomas the train set he wanted for Christmas, but we didn't buy because it didn't seem to be worth $50.  It was on clearance so I promise we didn't pay even close to $50.  The movie has been watched several times and Thomas is probably a favorite toy of both Ben and mine.  It folds out to be a big toy, but picks up really easily, quickly and small.  I love it!  Needless to say, we've been spending a lot of play time on the floor.





My mom bought Shawn a Homer Simpson chia pet for his birthday, and my mother-in-law bought Ben a little Santa grass planter for Christmas.  We decided that this would be the perfect time to work on these with the kids.  It was cute to watch how excited Ben was.  We did them 2 days ago and hopefully they will grow.  Ben checks on them several times every day.







Truth be told, I'm dying to get out and go shopping.  I know the kids are probably ready to get out as well.  We've been stuck in here for too long.  On the bright side, I've gotten a lot done around the house.  Last night we started eating dinner at the kitchen table with no TV, no computers, no toys, and no phones.  It's definitely something I'd like to continue.  Also, being at home, has made it easy to keep with the new sleep schedule, and it seems to be going really well!

Dinner tonight, Mango Island pork chops and veggies (made in the crock pot) served over rice.  Hope it turns out well.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
