Happy Homemaker Monday

Woo!  I feel like the last couple of weeks have been insane.  We're just adjusting to another new normal with Shawn working from home, and last week was Spring Break. Shawn had to go to Omaha for work, so the kids and I tagged along.  While he was working, we were out exploring and having fun.  We didn't have a single lazy day the entire break.




The weather outside is::::
I think it's supposed to be sort of nice today.  Not quite as warm as I would like but 50s.

On the breakfast plate this morning::::
Cinnamon toast crunch, green machine, and a big cup of espresso with Italian Sweet Cream creamer.

As I look outside my window:::
The sun is shining and things are starting to turn green and bloom.  It looks like spring.

Right now I am::::
Putting up this post and getting ready to cook lunch.

As I look around the house::::
There is a pile of laundry for me to fold on the couch and the breakfast dishes in the sink. Shawn and Sydney are asleep, snuggled together on the couch for Shawn's lunch break.  Rylie and Scotland are playing in the kitchen and eating yogurt melts.

On today's to do list::::
Laundry
Cleaning
Sydney's dance
Shawn's basketball

Currently reading::::
Just started reading the first Neverland Girls book to Sydney and I'm still trying to find time in my exhausting and busy schedule to read Game of Thrones.

On the TV today::::
So far nothing, but maybe here shortly I'll get a chance to watch something from my DVR or Stella on Hulu

On the menu this week::::

Monday - Chicken meat balls with yellow rice and veggies
Tuesday -  Pizza
Wednesday - Grilled Chicken and strawberry salad with Cherry vinaigrette and goat cheese
Thursday - Double cut grilled pork chops
Friday - We originally planned for a chicken dish here but because it's Friday and I can't eat meat it will probably be a sushi dinner.
Saturday -  
Sunday -

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
