Exhausted On This Super Long Week

This week is dragging on, ever so slowly! I can't believe it's only Wednesday night. I kid you not, yesterday, when I picked up Scottie from preschool, I thought it was Thursday and about told one of her teachers to have a nice weekend.



Not only is the week dragging, but I've been so completely exhausted since Monday morning.  I just cannot get enough sleep. I've been going to bed earlier than normal, and Scottie has slept in her bed, all night, for the past two nights.  Usually she comes into our bed, waking me up, any time between 2 and 4.

Why am I so tired?!?!

So far this week, I haven't touched my crochet or my iMovie and I've barely touched my book or my camera.  I have, however, gotten all of Rylie's birthday present shopping done, started shopping for decorations, got invites filled out and mailed out, and kept the house relatively clean.



I think Shawn and I are planning on going to brunch tomorrow morning after we drop Scottie off at school.  I love our occasional brunch dates, because we've been so long without much one on one time together. It's always been time filled with kids controlling conversation. Don't get me wrong, I love and enjoy time with my babies, but sometimes it's nice to be an adult and have adult conversations. We usually talk about the kids the whole time anyway.



Alright, it's 10:30 and I have to get up nice and early, to get kids ready and off to school. I may try to read for a few minutes before turning out the lights. My goal is to finish this book before the week is over.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
