Finally!

Yay!  My power cord finally came last night.  We purchased a spare as well, so hopefully I don't get caught like that again.  Does anyone else have problems with their laptop power cords fraying near where it plugs into the computer?

Halloween came and went.  We did some fun stuff to celebrate.  As shown in an early post, we made and frosted sugar cookies.  We also made rice crispy treats with Halloween sprinkles, carved pumpkins, did a ghost craft with cotton balls, and roasted pumpkin seeds.

These are the kids pumpkins.

Ben and his "scary" pumpkin.

 Me and Shawn's pumpkins.

We did 3 different kinds.
1. Cinnamon and sugar
2. Seasoning salt
3. Salt, garlic powder, and curry powder.

The day before Halloween, one of Shawn's cousin's got married, and we went to the wedding in Omaha.  Ben was sick, and I was worried about the car ride.  It wasn't too bad, but Ben didn't do well on the ride home.  Shawn and his Dad went to a concert back in Kansas City that evening, but Shawn's mom (Julie), both the kids, and I went to the reception.  We had such a good time.  I really love Shawn's family.  Ben turned out to be quite a little dancer.  We had a blast.

On Halloween, we went to the Legends.  We were a little late for trick-or-treating, but we still got to walk around and let Ben see the other kids in their costumes.  Ben wanted to do the moon walk, but after getting in, he changed his mind.  Afterwards, we went back to Shawn's parent's house and ate chili and hung out and just had a good time.  It was lots of fun.

The day after Halloween, we packed up the kids again, and went to Wichita for the visitation of a friend that had died.  It was so sad.  Her mother and my mother are best friends, and had been since they were children.  We didn't see her or her family often, but they were like family to us anyway.  I feel like I've gone to far too many of these things.  I was thinking about it and since I was pregnant with Ben, (he just turned 3) I have been to I think 5 funerals for family or close friends.  Too sad.

On a lighter note, this last weekend, I decided to make Ben an apron for when he helps me cook and for messy craft time.  I didn't quite know what I was getting myself into, but I had a vision, and went for it.  I'm so happy with how it turned out.  He loves it.

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
