Happy Homemaker Monday



The weather in my neck of the woods:
It's in the 40s today and quite cloudy.  I'm excited for the rain that we are supposed to get tomorrow.

Things that make me happy: 
A good night of sleep.
Book I'm reading: 
I'm just starting Eat, Pray, Love by Elizabeth Gilbert

What's on my TV today: 
The Closer and Rizoli and Isles tonight
As for today, last night's All American Muslim.

On the menu for dinner:
We have been busy and haven't gotten our grocery shopping done so tonight we are ordering pizza and picking up some food from the grocery store to get us through payday on Thursday.

On my To Do List:
Fold and put away laundry
Dishes

Vacuum and scrub floors

New Recipe I tried or want to try soon:

I haven't been very adventurous lately.  I've been cooking the same things we normally eat.  I'll have to figure out some way to mix it up.  I'm wanting to make a beef stew or something though.

In the craft basket:
Christmas gifts.

Looking forward to this week:
Hopefully getting my energy back. (I know this is doubtful)

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
