Happy Homemaker Monday

I really have been MIA for a couple of weeks.  We've had a lot going on in our home.  We've been under the weather for a couple of weeks as well.  Finally, I think we are getting better and things are getting in order for us.

  
The Weather:::

A little warmer this week than the past week or so.  Maybe we'll be able to get out and enjoy Halloween trick-r-treating on Thursday!




Right now I am::: 
Sitting on the couch while I watch the today show and enjoy a cup of English Breakfast Tea. 

Thinking:::
About how to prepare this pork loin for dinner.  After some research, I think I've come up with a good idea to create a yummy dinner. 

On my reading pile:::
I'm finally going to start Then Came You by Jennifer Weiner. She is my favorite author after all.
Also, Paula Deen's Southern Cooking Bible.  You should see my cookbooks.  Post its hanging out everywhere "pinning" recipes I can't wait to try, and little notes in the margins when I do try them.  I am a cookbook junky!

On my tv:::
I'm not really sure at this moment.  If the kids allow, then I may get some Walking Dead in, but the kids have to be occupied elsewhere.  Other than that, I'm not sure.  Maybe I'll finally take the opportunity today to get caught up on Downton Abbey.

On the menu for this week:::

Monday - Apricot Glazed Pork Loin, Roasted Veggies, and Homemade bread
Tuesday - Chili and Cornbread  
Wednesday - Pizza
Thursday - Going out for my neices birthday 
Friday - 
Saturday - 
Sunday - 

On my to do list:::
Laundry
Carve pumpkins with the kids


What I am sewing, crocheting, knitting or creating:::
I haven't had a chance to do much, although I'm dying to get back to my Granny square blanket, maybe work on a couple of scarves for Sydney and my niece, Langston, and some aprons. 

Looking around the house:::
My house is actually pretty clean.  There are a few toys in the living room to be picked up and a basket of laundry waiting to be washed in the hallway.  The dishwasher is running in the kitchen, the dryer is running.  The girls are both watching Special Agent Oso on their iPads.  I'm so excited to not have a ton of cleaning to do, and to not feel bogged down by chores and a mess.  I can actually enjoy my home.

Shawn had been gone all day visiting his uncle a few hours away.  He came home and the kids were so excited.  They all picked Halloween books for him to read to them before bed.



On my prayer list:::
My husband's family as they begin to heal from the passing of Shawn's Grandma.

I love Jennifer Weiner and I have read that book and enjoyed it :)

I'm also a cookbook junky, I read them like a novel at times LOL

Your menu looks really yummy, I could actually go for some chili right now.

I have a few cookbooks but rarely crack them o pen to be honest.. I really should though! lol!! Love the pic of hubby & kidlets.. soo sweet! :)

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
