Happy Homemaker Monday

It's Monday, again!  Darn Mondays keep coming by too quickly. Oh well, time to get moving with this post since I'm already late.

The weather.....
Toasty warm today.  I believe it's in the 70s today and I love it!

Right now I am....
Looking at my day planner, trying to get organized for Sydney's birthday party this weekend while the girls nap.

Thinking....
I'm a little stressed.  Not necessarily just about the party, just about the house work, Shawn's work, everything.

On my TV.....
Right now I'm binge watching this seasons Real Housewives of Beverly Hills that have been piling up on my DVR and am planning to watch Fuller House later. I'm so in love with it.  It's light and fun.  Just like more shows should be.

On the menu for this week....

Monday -  Jimmy Johns and Picklemans
Tuesday - Frozen Pizzas
Wednesday - Super Nachos
Thursday -Spaghetti
Friday -

On my to do list....
Dishes
Laundry (I have sooo much to fold and put away.  I'm planning to enlist the kids to get it done much quicker.)
Take Ben to art class
Take Syd to dance - It's parents observation night, so I get to go in and watch.

In the craft basket....
Still have that same corner to corner blanket I'm working on.

Looking forward to this week....
Sydney's birthday party and just hanging out with the kids.

Looking around the house....
The dishes are taunting me.  Yes, all the dishes from last night's dinner are sitting in the sink and on the counter.  Once I get those done though, at least the living areas will look nicely. LOL

From the camera....
The weather this weekend was truly amazing so we got outside as much as we could.

On my prayer list.....
Shawn with his work.
My friend who recently had a baby and then lost her father. She seems to be a very tough woman, but I know it's hard to lose someone so close to you and she definitely could use the prayers.
My husband's aunt who makes the move to Colorado tomorrow.

Bible verse, Devotional....

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
