2019!!!

Hello 2019!

Last year, 2018, was a year that for a good chunk of, I forgot about me. I spent most of my time running kids from place to place, didn't crochet, cooked a lot but didn't keep track or log my recipes, barely kept up on videos, no blogs, and didn't read as much as I'd have liked. I ended up struggling a lot with my anxiety and depression.

It's now 2019 and I'm still struggling with anxiety and depression, and life won't slow down much any time soon, but I need me. I need to go back to doing what makes me happy too.

I'm listening to books on audible and podcasts, I'm relearning French (and taking lots of notes because secretly I miss school, just not all the craziness that goes with it and scheduling), I've pulled old crochet projects out and jumped back in, as well as am planning new ones, I'm already on my 3rd book of the year for me (not counting Farmer Boy that I'm reading to the kids), we've had family game night twice since the new year, I've started editing a video about all of our crazy Christmas shenanigans, I've tried 4 new recipes already, and I'm typing this blog.

Now, I have a lot on my plate. School starts back up for Scottie tomorrow and for Ben, Syd, and Ry on Wednesday. Dance started up again tonight for Rylie and Scottie, all four swim on Tuesdays, Syd has jazz dance on Wednesdays and ballet on Fridays, soon Ben starts with the tech for a local play on Sundays, and hopefully Syd and Ry will be in the next ballet (They auditioned on Saturday). Baseball and softball will start before we know it and soccer for Ry and Scottie even sooner. Life is insane, but I can't completely get lost any longer.

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
