Red Chard and Caramelized Onions

In our fruit and vegetable box from Door to Door Organics, we received 2 bunches of red chard.  I'd never even  heard of it before.  After searching several different recipes for red chard, I came up with my recipe for Red Chard and Caramelized Onions.  It tasted so good too.

Red Chard and Caramelized Onions


1 large onion, sliced
olive oil
1 tsp brown sugar
1 bunch red chard, rinsed and chopped
1/4 cup kalamata olives, rinsed
2 tbsp capers, rinsed
1 tsp lemon juice


In a skillet, cook onions in olive oil until they begin to brown.  Stir in the brown sugar, and continue cooking for about 2 minutes.
When onions are brown, stir in chard and olives.  Cook until chard is slightly wilted and stir in capers.  Continue cooking until chard is completely wilted, about 3 more minutes.  Poor lemon juice over the top and stir.
