Whew I've gotten behind.

But in my defense, a lot has happened in this past week.  I'm going to let you in on all of that now.

Here was our schedule for last week:

We have been spending so much time together as a family lately and I love it.

Tuesday, we got our very first delivery from Door To Door Organics.  I was so excited that I waited around for it and it didn't come and didn't come and didn't come.  I gave up and decided to take the kids to the park.  We were at the park for an hour and a half and then went to pick Shawn up from work.  When we came home, we had a huge box by the front door.  Before the delivery, our fridge was empty since it was time to go grocery shopping.  After the delivery, I was searching for places to put food.

This was everything we received:

This is our fridge after the delivery:

Thursday, was our grocery day.  I clip coupons and look for deals everywhere.  I look at all of the ads and will go to several different places.  I ended up buying so much groceries for so little money.  The trick was finding places to put all of our groceries after all of the fruits and veggies already in there.

Thursday, was also Shawn's little sister, Kelly's, 19th birthday.  We went out to eat at the Mexican restaurant we love there.  Ben always gets a cheese quesadilla.  The cheese is really thick and stringy and it gagged Ben causing him to throw up everywhere.  We had to leave to clean Ben up without getting to eat and some people, Kelly included, got their food ruined by being in the line of fire.  I felt so bad and feel like I owe Kelly a dinner.  The night ended pretty nice though by eating cake and ice cream outside on the patio and making s'mores over the bonfire.

Friday, we went to our friend's house for dinner and then to a firework show.  It was such a wonderful dinner and nice for Ben to play with other children his age.  The firework show was so nice, but Ben got a little scared.  Shawn took Ben and they ended up sitting in a nice couples car to watch the show.

Saturday, Shawn had Dungeons and Dragons with his friends and I had all kinds of fun plans for me and the kids outside.  The weather had other plans.  It ended up raining all afternoon.  Our finger painting had to come inside.  I laid out a sheet on the living room floor and away we went.

The finger painting was supposed to happen Friday, but we were busy.  We made fireworks.

Shawn's parents came over and we watched Nurse Jackie, and grilled hamburgers.  It was really nice to have them here for a relaxed evening.

After Dungeons and Dragons was over, I packed up the kids and headed to the friend's house that Shawn was at so we could all watch the UFC fight together.  As much as I used to hate the fights (I'm not much for violence), I'm really starting to get into them.  I enjoy watching them now.

Sunday was Independence Day.  We went to Kansas City, and had a good time with Shawn's parents.  Shawn's aunt and uncle from Nebraska came down to visit too.  The kids looked so adorable in their clothes that Shawn's mom got them.

Shawn, Terry, and Shawn's uncle, Iggy fixed the breaks, air conditioner, and muffler bracket thingy on the car, and then, after we went and bought fireworks, it started raining.  We had to wait until Monday to set off some of them, but even then, we didn't get to do them all because of the rain and we were tired and didn't want to wait until after it got dark to set them off and then go home.

Finally, we've still  been doing a lot of walking and exercising.  We've been averaging 3.5 miles an evening.  This last week though, we've been walking down Mass St, people watching and playing at the park as well.  It's been so much fun and the kids get a kick out of it too.

Coming up this week, we'll be learning the letter V, having dinner with our friends Tim and Bekah, and pretty much just doing our own thing.

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
