Happy Homemaker Monday


As I look outside my window:::
This morning, when I woke up, it was about 10 degrees outside.  I think we are going to get to 33 degrees today.  Everything just looks gray.

Right now I am::: 
Sitting on the couch watching a little trashy reality TV.

Thinking and pondering:::
New Years and I'm so excited to see what the new year will bring.

On my bedside table:::
My daily devotional
A water bottle or two or three
The remote to my TV

On my tv tonight:::
I'm still trying to get caught up on my Christmas specials.  My DVR has been acting up since my husband moved the modem around upstairs, so I don't have any of my recordings at the moment.
I've also been way hooked on Sons of Anarchy and have been watching every chance I get. 

Listening to:::
My kids playing wildly around the living room.

On the menu for this week:::
I know nothing except for tonight's meal...
Monday - Lemon Chicken with Artichoke Hearts, cranberries, potatoes au gratin, and roasted broccoli and asparagus.

On my to do list:::
Dishes
Put laundry away
Vacuum

What I am sewing, crocheting, knitting or creating:::
I have nothing at the moment.  I need to get my hands on some material or yarn.  I'm so missing being crafty, I just haven't had much time.
 
My simple pleasure:::

Snuggling my babies while watching TV.  

Lesson learned the past week:::
I'm still working on it but it's to keep calm...

Looking around the house:::
The Christmas decorations have been taken down and the kids new toys have all found their new places.  I have a pile of dishes waiting for me in the sink, left over from last night, and the folding table set up in the living room with folded clothes piled on it, ready to be put away.  The kids are having a good time playing with toys and eating pica de gallo potato chips.

From the camera:::
We never get pictures of the full family and while at the museum Saturday, somebody offered to take our picture.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
