Amish Easy Chicken Casserole

I've been a little behind on posting recipes we've cooked and loved.  I'll try to get caught up on this today.  This recipe went so fast and the kids actually fought over the left overs.  Shawn even said it's in his top 5 recipes.  This one, like most of our favorites came from Sandra over at Full Bellies, Happy Kids.  I did tweak it just a little to adjust for our likings.  You can see the original recipe here or my version of it right here.

My biggest regret is that I don't have a picture of this delicious meal.


Amish Easy Chicken Casserole

8 oz. noodles, cooked
2 c. cooked chicken, cubed
2 c. chicken broth (can used canned)
1 c. milk
2 tsp. salt
1/2 tsp. pepper
1 tsp garlic powder
1/2 c. margarine
1/3 c. flour
grated Colby Jack


Melt margarine, then add flour and stir until smooth. Gradually add milk and broth, then seasonings and a handful or so of cheese. Combine chicken, cooked noodles, and prepared sauce. Put in ungreased 9 inch x 13 inch x 2 inch baking pan and top with cheese. Bake at 375 for 20 minutes.

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
