Happy Homemaker Monday

This weekend flew by so quickly!  Shawn left for a work trip yesterday morning and won't be back until Friday night so I'm hoping that the week will fly by as quickly as the weekend did.



The Weather:::
It is unbelievably cold! I think it's a whole 18 degrees right now.

Right now I am: 
Sitting on the couch, waiting for the groceries to get here.

Thinking:
The about the day and week ahead.  We've got a lot of fun stuff planned and I think I'm going to plan Shawn and my anniversary dinner for this weekend.

Right now I'm watching Larry Crowne which is actually quite a cute movie.

Things that make me happy:::
The kids home from school, making lots, of noise and running around like crazy kiddos and the dog laying at my feet enjoying them as well.

Wednesday - Taco John's for the kids school fund raiser

Hoping to get back to work on my corner to corner blanket tonight.

Looking around the house:::
We got some tidying done this morning, so outside of the kids' playroom needing a serious cleaning, the house is in good shape.  Ben and Sydney are sitting at the table. Scotland is snuggled up to me and Rylie is laying on the couch watching Scottie's iPad with her.

My friend Emily who still hasn't had her baby yet.  I believe she's at 41 weeks and 3 days or so now. Also, my husband for safe travels this week.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
