Happy Homemaker Monday



The Weather:::
I believe the high today was 40 degrees, but it actually feels warm, although it's supposed to be rainy today and it does look quite gloomy out.  According to the weather on our local station the temperature is supposed to drop and the rain is supposed to go away and just stay really cloudy.

Right now I am: 
Sitting at the kitchen table, drinking my coffee. 

Thinking:::
Rylie's Birthday!  It's coming up quite quickly and with kids class parties to prep for just a day or two before her birthday party, I need to get a move on. Thankfully Chuck E Cheese takes most of the work out of it.

Looking forward to:::
Bed time! Last night Scottie was up several times and it was a late night anyway.  Ugh!  

On my reading pile:::
Still reading Red Queen by Victoria Aveyard. It's really good and I would definitely recommend it.

On my tv:::
I'm not sure what to watch today. I'm thinking about watching some vlogs and maybe if I have time, some Call The Midwife.

Things that make me happy:::
My husband being home!  He was gone all week last week and it was awful.  He's going out of town again next week, but thankfully for not as long.  I'm just glad to have him around this week.

On the menu for this week:::
Monday - Cowboy Casserole and roasted veg (I've been meaning to make this for the last couple of weeks but it keeps getting bumped)
Tuesday - Amish Easy Chicken Casserole
Wednesday - Homemade Pizza
Thursday - Savory Beef and Noodles 
Friday - Out for a late anniversary dinner?
Saturday -
Sunday -

On my to do list:::
Laundry
Dishes
Put in a grocery order
Prepare dinner so Shawn can throw it in the oven this evening while I'm out.
Sydney's Dance
Ben's clay class
Play ponies with Rylie (I promised)
Teach the kids about the water problem in Flint Michigan because tomorrow after school we are taking bottled water to a drop off donation center that will be driven up later this week.

What I am sewing, crocheting, knitting or creating:::
Crochet corner to corner blanket
Decorations for Rylie's birthday party

Looking around the house:::
The house could use some tidying although most of that will have to happen later since the girls are playing in the mess in the living room.  When they get along, and the house is filled with laughter, it's the best feeling in the world.

My family to hopefully get over this cold we've had since Thanksgiving. 
Rylie, to be able to go to school this week with no problems.  She had a pretty big panic attack last Thursday and I'm hoping since Shawn's back in town in won't happen again.

Mmmmm yummy menu, and a lot of those are some of our favorites too. Glad you have hubby home this week, I know it's hard for you when he's away.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! The weather outside is:::: Very cold mornings causing us to turn our heat on but warm afternoons. Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
