An End To A Lazy Day

First of all, I'm going to apologize that this post and the next one or two will be all over the place.  I'm so scattered and tired but have so much I've been meaning to say over the past month or two that I feel the need to post at least a couple of pictures and stories from all the big things we've done around here.

Ok, so earlier today, I posted that I was in a funk.  Well, I never really snapped out of it.  I even ordered Pizza Hut for dinner.  I've decided that we are all entitled to be lazy and have our off days.  Tomorrow is a new day, and hopefully, it will be better.  It has to be, because I can't take the house looking like this any longer.  Tomorrow promises to be a busy day, which I don't know if I'm excited about.  I mean I love that Ben goes to preschool and has a good time and I love my RCIA classes, but I have so much stuff to do and not so much time to do it.  I have errands to run, and at this moment, I can't even concentrate on what these errands are for or where to.  I'm either super tired or crazy now.

My darling Sydney tried to fix her hair.  I did it first, then while playing she accidentally messed it up and tried to fix it herself.  I couldn't help but laugh at how cute and funny she looked.



Most of today was spent laying around, watching Frasier on Netflix.






Shawn is on yet another business trip.  Luckily it's a short one and it looks like he's only going to be gone tonight.  It's to the point now, where it almost feels weird when he is home.  I hate that feeling.

In case you didn't notice, I, for the first time ever, finally created my own blog banner!!!!  Sorry this is a triumph for me.  I'm obsessed with photography and, I believe, decent at my blog,  but I'm not very computer literate and since my husband has been gone a lot (not able to help) I've had to either put off changes and beautifying my blog or try to figure it out on my own.  I finally did it.

Also, I promised I'd share more pictures when we finished decorating the house for Halloween.  We did decorations last week and last night we decorated the pumpkins we got from the pumpkin patch on Sunday.

It came out really cool and fun.  The kids love it.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
