Run Down and Sick

I seem to have caught another cold... I swear I spend the entire winter with a cough, sore throat, and clogged nose. I'm so tired of it. The worst part is, yesterday I was saying how this cold wasn't so bad (I'm the 5th in the house to catch it) and that the cough was annoying but I was glad I didn't feel completely down. As the day has gone on today, I've felt worse and worse, and now I just want to lay down.

If only a nap was possible.  Tonight, the big 3 have swimming lessons. As they are only 30 minutes long, I need to stick around. Usually I don't mind, but when my chest and throat are sore, nothing sounds quite as awful as sitting in a chlorine filled room. I'll be there again for Scottie's lessons, tomorrow morning also.

Tonight, I'm making Sloppy Joes and roasted veggies for dinner tonight. I've seen Sloppy Joes on several meal plans lately and it sounds delicious.

I had a grocery delivery this morning.





(The worst part is, this will do for breakfasts, lunches and snacks for the rest of the week, but only 2 dinners.)

Thank goodness I didn't have to brave the store feeling this rough, for a big trip like today. I may have top venture out shortly for cold meds though.  Maybe I'll try to send Shawn if I can't round some up around here.

Alright, I'm done being a whiner and completely annoying. I need to get the kids to the pool anyway and I can't do that until I round up their goggles and towels.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
