Happy Homemaker Monday

Good morning!!! This time change is kicking my behind this morning, but I'm not 100% sure that's the only reason I'm dragging. I may have stayed up super late watching The Aviator with Shawn, and today is such a cold gloomy day, I could just hibernate. Alright, enough complaining and on with the post.

The weather:::
Today is cold and rainy. I think the high today is 40 and it supposed to slowly warm up throughout the week.

On my reading pile:::
My Not so Perfect Life by Sophie Kinsella. Last week I read Can You Keep a Secret by Sophie Kinsella as well. I devoured it in 3 days. I'm going to break out her Shopaholic series soon as I've only read the first one, but have most of the collection.

Movies or Shows I watched this weekend:::
We watched Sing together as a family. It was cute. We've been doing family movie night on Friday or Saturday nights.
I watched last week's Grey's Anatomy as well as last week's This Is Us, and all of the episodes of Fixer Upper I had on my DVR.

On my TV:::
I'm not really sure today. Monday's are crazy busy for me, but I have several episodes of Planet Earth 2 I'd like to turn on, if I get the chance.
Currently, Rylie and Scottie are watching Lab Rats on the TV in their room, and Ben, who is home sick, is laying in bed watching Pokemon.

On the menu for this week:::

Monday
Meatloaf with mashed potatoes, veggies, and mac and cheese
Tuesday
Slow Cooker Sticky Chicken with stir fried rice and veg
Wednesday
Pork Chops with Whole Grain Mustard Pan Sauce
Thursday
Frozen Pizzas
Friday
Corned beef with cabbage and potatoes
Saturday

Sunday

On my to do list:::
Laundry
Dishes
Disinfect Ben's room and anything he touches
Sydney and Rylie's dance class

What I am sewing, crocheting, knitting or creating:::
I'm slowly working my way through a crochet virus blanket, but I also picked up one of my books of  crochet patterns to work with until I can get to the yarn store. My goal this week is also to make a headboard for Ben's bed.

Happening this week:::
Sydney and Rylie have dance class today. Ben stayed home from school today. Hopefully he's able to go back tomorrow. Shawn goes away on a business trip towards the end of the week and the kids are out of school Friday to begin spring break. If the weather is nice and my kids aren't sick, we plan to go to the local St. Patrick's Day parade with some friends on Friday.

Looking around the house:::

Shawn and I tackled the house work yesterday so it's in pretty tip top shape today. Just have the daily stuff like laundry, dishes, and cleaning the kitchen floor to keep up with.

From the camera:::
Last week, we celebrated Sydney's 7th Birthday. It's crazy how fast the time has flown.

What I'm wearing today:::
Currently, I'm in a pair of sweats and one of Shawn's old hole covered t-shirts. I'm about to go change into a pair of jeggings, my black tank top, and grey high necked sweater.

One of my simple pleasures:::
Family time! Every Saturday evening, my sister-in-law and her fiancé come over, as does our good friend Torren (he's also the children's God father, so he's really just family at this point.) Sometimes more family comes as well, but it's always us and we all eat dinner together and sometimes play video games with the kids. After the kids go to sleep we play games like Smart Ass or Cards Against Humanity and watch movies, usually scary ones. It's probably my favorite part of the week. I always dreamed of a big, close family and all do things together like I had when we'd go to my Uncle Larry's farm. Every Saturday I get to feel like it's coming true.

Bible verse, Devotional:::

I've heard those books are really good although I've not read anything by that author. Maybe I'll give them a try. Love all the colorful balloons in your daughter's birthday photo. Hope you have a wonderful week!

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
