Refrigerator Oatmeal

Ok, so Sandra over at Diary of a Stay at Home Mom and Full Bellies Make Happy Kids gets all the best recipes.  If you don't follow her, you should.

A couple of days ago Sandra posted about making Refrigerator Oatmeal.  I'm not a big oatmeal fan.  As a matter of fact, I'm very picky when it comes to oatmeal.  I was a little skeptical when she said how great it was, but since she doesn't really like oatmeal either I gave it a try.  I picked the one that sounded the best and made a few jars.  Thank goodness I made a few because Sydney ate so much of my first one, I was still starving when it was empty.  Haha!

Refrigerator Peanut Butter and Banana Oatmeal


Ingredients:

1/4 cup uncooked old fashioned oats
1/4 cup vanilla Greek yogurt
1/4 cup milk
1 tsp honey
1 tsp peanut butter
1/2 banana, sliced

Directions:

In a 1 cup jar add oats, yogurt, milk, honey, and peanut butter.  Put the lid on the jar and shake until well combined.  Remove lid and add bananas.  Stir until well mixed.  Put the lid back on the jar and put in the refrigerator over night or for up to 2 days.  Eat chilled.

It's crazy, I wasn't sure if I would like it either since I'm not an oatmeal fan at all....but it's really good :)

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes.
