Father's Day

I hate his traveling.  I really really do!  He had to leave on Father's Day and he won't be back until Tuesday. We just got him back and he was here for two days before leaving again.

Anyway, moving on to happier things.  Last night, we decided to celebrate Father's Day at the lake with a little cook out and some fishing.  Shawn's parent's and siblings unfortunately couldn't make it, but we were there as well as Terry, Torren, and our friend Buck.

Nobody caught anything but everyone had fun trying.


Yes, we made the kids wear life jackets because the water there was really deep and I'm a huge worrier.  It's just better safe than sorry in my eyes.



And of course I nursed Rylie in style.


We grilled some chicken thighs and veggies, while Shawn, Torren, and Buck went into town and brought back pizza and chips.


The weather was amazing and the lake was gorgeous.  It was just nice to kick back and relax.


Poor Ben was the first to crash and he was so gosh darn cute.


This morning, the kids even slept in.  We must have worn them out.  After we all finally woke up, the kids and I came down stairs and made some cinnamon rolls and Father's Day cards.  We set up everything to eat outside and had a wonderful brunch.


Shortly after brunch though, the fun was over when Shawn and I came in to fold laundry and pack his suitcase.  Now he's gone and I'm left to figure out dinner.  We were supposed to be at my in-laws for dinner tonight, celebrating Father's Day for my father-in-law and my brother-in-law, who is about to become a father this year.  Instead, we're at home because my father-in-law is sick.  I just hope he gets better super quick and I believe we'll be eating Wendy's.

Woke up to a nice cold, fall day this morning. When I did the school run this morning it was a whole 37 degrees.  Brrrrr!!! Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
