Meal Plan Mondays

Ok, so my friends over at The Nerd Nest do a weekly post called Savory Sunday where they do their meal plan for the week and go over the last weeks meal plan as well as what they actually ended up eating.

I'm a list-aholic.  I love to keep order and I do that by to-do lists, checklists, meal plans, etc.  While I love lists, lets face it, I'm not very good at following them and meal plans are the hardest for me to stick to.  I decided to start doing a weekly post, like their weekly Savory Sunday posts, but mine will be Meal Plan Mondays since I'm not so good at posting on Sundays.  Hopefully this will make me a little better at sticking to the meal plan I've created.



The meal plan for last week is:



Monday - Brats, corn on the cob, and veggies
Tuesday - In KC
Wednesday - Shredded BBQ chicken sandwiches, fries, fruit
Thursday - Baked ham and cheese sliders and chips
Friday - Homemade Pizza
Saturday - Grilled Cheese and tomato soup
Sunday - In KC



Monday - Grilled brats, corn on the cob, summer squash, grapes


Tuesday - Wendy's (In KC)
Wednesday - Shredded BBQ chicken sandwiches, fries, grapes


Thursday - Baked ham and cheese sliders and chips
Friday - Homemade Pizza
Saturday - Grilled hamburgers and hotdogs, butternut squash, watermelon, salad (In KC)
Sunday - Grilled chicken thighs, butternut squash, broccoli cauliflower, carrots, watermelon (In KC)


The meal plan for this week is:






Monday - Creamy taco pasta bake, chips and super mild salsa
Tuesday - Ranch house crockpot porkchops, rice, veggies, and bread
Wednesday - Encore
Thursday - Roasted Chicken, veggies, mashed potatoes
Friday - Spaghetti with meatballs and bread
Saturday - Baked chicken, creamy corn and fruit
Sunday - In KC

Keeping myself accountable is exactly why I do it- routinely posting my meal plans weekly really makes me sit down and do it so we're not winging it all week (i.e. eating out all the time and impulse buying at the grocery store).

It also makes it easier to look back at what we're REALLY eating so I can asses how healthy we're really being.

That's exactly what I thought when I saw you doing it. We have a tendency to buy for certain meals at the grocery store but then when it's time for dinner we haven't thawed out the meat or prepared anything and we end up going to get something (usually fast food) to eat. I love it. I already track what we eat in my planner (so I know when to throw out leftovers) but now I'm planning before hand and it makes it much easier.

You know I've been meal planning for, geez, I don't know almost 20 years.

I find that sometimes just because I put something on the menu for a specific day it doesn't mean it HAS to be that, sometimes I switch meals around, but I do stick to the menu.

Huge help on the budget and in knowing what I am cooking. What I find works for me is the night before I head to bed, I peek at the Menu and move whatever has to be thawed to the fridge, in the morning I take it out :)

I'm really bad about doing a grocery list built from a specific menu plan but then come home and just make whatever and then we end up having to go back to the store multiple times or eat a lot of fast food...

I'm hopefully going to avoid that. It's too expensive and not healthy to eat so much fast food.

Potato Soup

During Lent this last spring, I needed a meat free dinner to feed my sister-in-law and her family. Usually my potato soup has lots of bacon and bacon grease in it. I found this recipe here .This one is meatless, but it is important to add that it is NOT dairy free. There are adjustments you can do to make it dairy free though. It’s quick and was really well liked.  Potato Soup 6-8 cups russet potatoes, peeled and chopped 1 yellow onion, diced 2 stalks celery, chopped 1 clove garlic 4 cups vegetable stock 2 cups cheddar cheese, shredded 1/2 cup Parmesan cheese, shredded 1/2 cup sour cream or cream 1 tsp salt 1/2 tsp pepper Pinch red pepper flakes 1 tbsp butter 1 tbsp olive oil In a large pot over medium heat, add the butter and olive oil. Once hot and melted together add the onions and celery. Season with salt, pepper, and red pepper flakes. Add the potatoes and minced garlic to the pot and continue to sauté all of the ingredients for about 5 minutes. Add vegetable stock and increase th
